From-Scratch Mayonnaise

Ingredients
  

  • 1 egg
  • 1 egg yolk
  • 1 1/2 tbsp lemon juice
  • 1 tsp mustard (regular or dijon style)
  • 1/8 tsp salt
  • 3/4 -1 cup avocado oil (olive oil, sunflower oil)

Method
 

  1. Add all the ingredients, minus the oil, to a food processor and pulse until blended.
  2. Slowing add oil in a stream while processor is going until all ingredients are blended thoroughly.
  3. Pour into a glass jar with a lid and refrigerate. The mayo will become thicker over a couple of days.
  4. Typically lasts 2-3 weeks when kept in the refrigerator.
