Vintage Life Farm’s Easy Sandwich Bread

My great-grandmother's recipe delivers a soft and sweet tasting sandwich bread that your whole family will love!
Servings: 1 loaf

Ingredients
  

  • 3 cups flour choose flour with 10%-12% protein
  • 1 cup tepid water 80°F to 105°F (27°C to 40°C
  • ½ cup milk warmed but not boiling
  • 1 tbsp honey or sugar
  • 1½ tbsp oil or fat olive oil, avocado oil, melted butter or tallow
  • 1 tsp active or instant yeast
  • 1 tsp salt

Method
 

Activate yeast
  1. In a large bowl, combine warm water, warm milk, honey/sugar, and yeast. Stir gently and let sit 5–10 minutes until foamy.
Mix dough
  1. Stir in oil (or butter) and salt. Add flour, one cup at a time, until a soft dough forms.
Knead
  1. Knead by hand 8–10 minutes (or 5–6 minutes with a mixer) until smooth and elastic.
First rise
  1. Place dough in a lightly oiled bowl. Cover and let rise in a warm spot 1–1½ hours, or until doubled.
Shape loaf
  1. Punch down dough. Shape into a loaf and place in a greased loaf pan.
Second rise
  1. Cover and let rise 30–45 minutes, until dough rises about 1 inch above the pan.
Bake
  1. Bake at 350°F for 40 minutes, or until tops are golden brown.
Cool
  1. Remove from pans and cool on a rack before slicing.
Notes
  1. For softer bread: replace ½–1 cup water with milk
  2. Brush tops with butter after baking for a soft crust
  3. Stores well at room temp 2–3 days or freeze for later
