Vintage Life Farm's Simple Sandwich Bread

Servings: 1 loaf

Ingredients
  

  • 3 cups flour bread flour, milled flour, all purpose flour
  • 1 cup tepid water
  • ½ cup milk
  • 1 tbsp honey or sugar
  • tbsp oil or fat avocado oil, melted butter or tallow
  • 1 tsp active or instant yeast
  • 1 tsp salt

Method
 

  1. In a large bowl, combine warm water, sugar, and yeast. Stir gently and let sit 5–10 minutes until foamy.
  2. Stir in oil (or butter) and salt. Add flour, one cup at a time, until a soft dough forms.
  3. Knead by hand 8–10 minutes (or 5–6 minutes with a mixer) until smooth and elastic.
  4. Place dough in a lightly oiled bowl. Cover and let rise in a warm spot 1–1½ hours, or until doubled.
  5. Punch down dough. Shape into a loaf and place in a greased loaf pan.
  6. Cover and let rise 30–45 minutes, until dough rises about 1 inch above the pan.
  7. Bake at 350°F for 40 minutes, or until tops are golden brown.
  8. Remove from pans and cool on a rack before slicing.

Notes

  • For softer bread: replace ½–1 cup water with milk
  • Brush tops with butter after baking for a soft crust
  • Stores well at room temp 2–3 days or freeze for later
