Vintage Life Farm’s Simple Sandwich Bread

My great-grandmother's bread recipe that I hope becomes a favorite in your kitchen!
Servings: 1 loaf

Ingredients

  • 3+ cups flour bread flour, milled flour, all purpose flour (protein between 11%-13% is ideal)
  • 1 cup water warmed
  • ½ cup milk warmed
  • 1 tbsp honey or sugar
  • 1½ tbsp oil or fat avocado oil, melted butter or tallow
  • 1 tsp active yeast can use instant, but it won't typically foam, so you won't see that
  • 1 tsp salt

Method

  1. In a large bowl, combine warm water, sugar, and yeast. Stir gently and let sit 5–10 minutes until foamy.
  2. Stir in oil (or butter) and salt. Add flour, one cup at a time, until a soft dough forms.
  3. Knead by hand 8–10 minutes (or 5–6 minutes with a mixer) until smooth and elastic.
  4. Place dough in a lightly oiled bowl. Cover and let rise in a warm spot 1–1½ hours, or until doubled. The doubling is more important than the time.
  5. Punch down dough. Shape into a loaf and place in a greased loaf pan.
  6. Cover and let rise 30–45 minutes, until dough rises about 1 inch above the pan.
  7. Bake at 350°F for 40 minutes, or until tops are golden brown and hollow when tapped on top.
  8. Remove from pans and immediately brush with butter. This will keep the crust soft.
  9. Allow to cool before slicing – it continues baking for a while longer. Slicing too early may lead to a doughy crumb.
